We did it again! We healthafied one of your favorite home time classics, bagels and cream cheese. Gluten-free, dairy-free, and raw vegan never tasted so good! Our Scrumptious Raw Vegan Bagel with Sunflower Cream Cheese will have your mouth watering. We don’t need to give up our favorite foods when trying to be healthier. Sometimes all you need to do is make healthy choices with ingredients and cooking methods.  Eating healthier doesn’t need to be about restraint and diets, it’s about feeding your body what is needs to work optimally while enjoying the ride. Bon appetite!

Sunflower Cream Cheese

Ingredients:

  • 3 cup sunflower Seeds
  • 3 tbsp. miso
  • dash of black pepper
  • dash of Himalayan salt
  • juice from 1 1/2 limes

Bagel

Ingredients:

  • 1 cup almonds (soaked at least 2 hours)
  • 1 cup carrots
  • 3 tbsp whole flax seeds, ground
  • 2 1/2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp miso
  • 1 tsp garlic clove
  • ½ white onion
  • 1 tbsp water

Directions:

In your food processor or vitamix, grind the flax seeds and set them aside. Blend the soaked almonds, carrots, vinegar, olive oil, onion, garlic and miso in your food processor until you get a rice like consistency. Add your ground flax seed in and mix in your processor until a well blended sticky dough forms. You may need to keep scraping down the sides of your processor to ensure it is well blended. You may also need to add 1 tbsp of water if the dough isn’t quite workable.

Form dough into 1 1/2inch thick rolls or however thick you would like your bagels. Make sure and have it a bit thicker then the size of the bagel you want because as you dehydrate them, they will slightly shrink. Place it on your dehydrator sheet and join the edges of each of the rolls. Mush the edges together to form the shape of a bagel and press it down to desired thickness. You can choose to make the bagels thick enough to slice in half after they are done, or you can make individual slices which will take less time to dehydrate. We chose to make individual slices. Dehydrate in your dehydrator overnight or roughly 8 hours. Dry until desired texture.

Blend cream cheese ingredients in your blender or Vitmaix until Smooth. Spread over bagels and enjoy!
