It’s summer here in Costa Rica, and with this heat, savory raw vegan pasta is the only way to go! It’s super easy and quick to make, so you will be cooling off in the evening with this refreshing dinner in no time.
Equipment you will need:
Spiralizer
Vitamix or Food Processor
Ingredients:
Pasta:
2 zucchini
2 carrots
2 cucumbers
Marinara Sauce:
1-2 tomatoes
1 handful basil
1 small garlic clove
2 TBL apple cider vinegar
2 TBL organic extra virgin olive oil
salt and pepper to taste
sesame seeds to garnish
Process:
1.) Put each of the zucchini, carrots, and cucumbers through the spiralizer to make the pasta. TIP: make sure to cut off any curved parts of the veggies as you want it to stay level as it goes through the spiralizer.
2.) Put the tomatoes, basil, garlic, oil, vinegar, salt and pepper in the Vitamix or food processor and blend until you have a smooth liquid sauce.
3.) Adjust the sauce seasoning to your taste.
4.) Sprinkle sesame seeds on top to garnish.
5.) Put it on a plate and serve!
